So, exciting news sports fans: Miss9’s soccer team will be playing at half-time of tonight’s Matilda’s game! For those that aren’t into soccer, the Matildas are the Australian national soccer team and they are playing Vietnam tonight at a stadium half an hour away. Miss9’s team will take to the field at half-time to play a short game. Yippee!
To keep energy levels up I have made these brown sugar cookies for the team (Miss9’s, not the Matildas!). I have made brown sugar bickies many times but they have never been as good as these.
Even better, these are a no-mixer-required, one bowl wonder. The dough doesn’t require time to rest in the fridge and from starting to eating will take about half an hour. I cut waaaay down on the sugar but even with my reduced amount they were lovely.
Go forth and bake, and if you hear an embarrassing mum screaming out encouragement to her daughter during a soccer match, please excuse me her ;)
GATHER:
190 grams unsalted butter, melted
1 cup packed light brown sugar, divided
1 egg
2 teaspoons vanilla extract
2 cups plain flour
1 teaspoon baking powder
LET’S GET TO IT:
Preheat oven to 180C and line two baking trays with non-stick baking paper.
In a large bowl use a silver spoon to stir together ¾ cup brown sugar and melted butter until just combined.
Add in egg, vanilla, flour and baking powder and stir until mixed.
Roll walnut-size balls and place on trays, allowing a bit of room to spread.
Tip remaining ¼ cup of brown sugar into bowl (no need to even wipe it out) then carefully roll each cookie in the sugar.
Replace on tray then gently flatten with a fork.
Bake for 9-10 minutes or until light gold.
Remove to wire rack to cool completely.
