Red velvet cookies with cream cheese filling

I was looking for red velvet-themed baking recipes to make. I found enough to keep me baking every day for the rest of my life but there was something about this one that caught me eye. Red velvet is my fav flavour on the rare occasion that I indulge in sweet treats so I knew I had to make these.

This recipe from Cooking Classy was titled red velvet Oreos, but I switched her filling recipe for a cream cheese one as I think cream cheese *anything* is the icing on the cake, as it were. Here is the original recipe www.cookingclassy.com/2014/11/red-velvet-oreos/ 

(I reduced the sugar).

As you would be aware there’s about a gazillion cream cheese icing recipes online. I used this one from taste.com.au and it was perfect:

60g cream cheese, softened

30g butter, softened

1/2 teaspoon vanilla essence

3/4 cup icing sugar mixture

 GATHER:

1 ½ cups plain flour

2 tablespoons cocoa

1 teaspoon baking soda

¼ teaspoon baking powder

Just over ½ cup of sugar

1 egg

115grams butter, softened, diced

1 tablespoon red gel colouring – don’t use cheap liquid colouring as it will taste bad and won’t give you the colour you want

LET’S GET TO IT:

Preheat oven to 180C and line two baking trays with non-stick baking paper.

In a bowl sift together the flour, cocoa, baking powder and baking soda.

In bowl of electric mixer mix butter and sugar until pale, scrape down sides then add egg and gel colouring.

Turn mixer to low then fold in the flour mixture and beat until combined.

Make balls slightly bigger than a walnut and use the bottom of a drinking glass to gently flatten.

Bake for 8 minutes, cool on tray for five minutes, then transfer to cooling racks and allow to completely cool.

When cold sandwich together with the cream cheese icing, like my little assistant baker Miss9 is doing here. She loves piping :)

Icing:

In bowl of electric mixer beat cream cheese, butter and vanilla until pale, then gradually add icing sugar, beating until thoroughy mixed.

Spread on one side of cookie then sandwich together with another.
